So easy. So good. So good for you. This is always a crowd pleaser…guaranteed!
2 cups prunes (you can also use raisins)
2 cups walnuts (you can also use almonds)
2 tbsp chia seeds
1 cup raisins (you can also use dates–remove the pits and soak them to soften for 1 hour))
*Optional: add finely chopped ginger to taste
In a food processor, combine raisins, walnuts, chia seeds and blend for a few minutes until moist. It will start to form a ball and have a fudge-like consistency. Spread into a cake pan or circular plate to form the crust about 1inch thick.
In a food processor, combine raisins, mango, ginger until smooth and creamy.
Spread the mango frosting on top of the torte.
You can eat right away but it will be a little mushy (but still delish!) Refrigerate or freeze (which I prefer) to make it more solid and easier to cut. Once frozen, run a big knife under hot water first to make it easier for cutting. If you want to thaw and soften, just wait about 10 minutes.
You are what you eat.
You are what you think.
