I’ve been all about the Goji berry lately since I am leaving Canada soon and there won’t be any Goji berries in Nicaragua! You can pick them up at the health food store or in China Town for about $10 for a big bag.
Goji berries have been used for 6,000 years by herbalists in China, Tibet and India to:
- Protect the liver
- Help eyesight
- Boost immune function
- Improve circulation
- Promote longevity
- Improve sexual function and fertility
Goji berries are rich in antioxidants, particularly carotenoids such as beta-carotene and zeaxanthin. One of zeaxanthin’s key roles is to protect the retina of the eye by absorbing blue light and acting as an antioxidant. In fact, increased intake of foods containing zeathanthin may decrease the risk of developing age-related muscular degeneration (AMD), the leading cause of vision loss and blindness in people over the age of 65.
Here’s a simple dessert salad I made this weekend….so easy, so refreshing, so nutritious, and so delicious! Always raw, always vegan, and always gluten-free!
SWEET SUPER FOOD GOJI BERRY SALAD
- Shred 1-2 carrots
- Shred 1-2 apples
- Combine and squeeze fresh lemon juice over it
- Handful of raw pecans
- Handful of Goji berries
- Dash of cinnamon & nutmeg
- Toss, chill, enjoy!
It’s perfect for breakfast or a snack. For added protein sprinkle hemp seeds in it.
