GLO Chocolate Mint Pistachio Squares (raw, vegan)

Gracious Living Raw, Vegan, Chocolate Mint Pistachio Squares

I’m back with a chocolate vengeance, this time with a new tasty GUILT-FREE decadent chocolate recipe. (a variation of my GLO Raw, Vegan Monkey Fudge:  click HERE.)

All my recipes are guilt-free. YES, it’s true! Why you ask? How you ask? Because every single ingredient  I use in ALL my recipes has a beneficial effect on the body. I will only use ingredients, whether big, or small, that promote health and healing in your body. I only ever use ingredients that speed up your metabolism, burn fat, and detoxify the body. I only ever use ingredients that I eat regularly myself. I only create recipes that nourish my cells and make me feel good. And then I share them with you! Love the foods that love you back!

Ok, let’s get to it!

Gracious Living (Raw, Vegan) Chocolate Mint Pistachio Squares

2 tbsp raw cacao powder 1/2 cup raw almond butter (or all natural peanut butter, or try it with raw tahini) 2-3 tbsp maple syrup, or yacon syrup 1.5 tbsp raw maca powder (great as an anti-stress and anti-anxiety superfood) 1.5 tbsp flax oil (I used Barleans chocolate mint swirl flax oil) 2 tbsp room temperature raw coconut oil 1 tbsp PURE liquid vanilla (artificial vanilla contains CORN SYRUP! YIKES! get the real deal!) 8 leaves of finely chopped mint OR 1 drop PURE peppermint oil (pure peppermint oil is very strong…don’t use too much) sprinkle sea salt

TOPPING:  3/4 cup shelled raw, pistachios

*Mix well in a bowl with a wooden spoon until nice and creamy. (No need for equipment!) *Line baking dish with parchment paper. *Place mixture in dish lined with paper. Spread evenly so that it will freeze into a flat mixture that is not too thick….like a thin bar.

Top with shelled, raw pistachios.   Press them into the top with the back of your spoon so they are embedded in there. Freeze for a few hours.
