GLO Lemon Coconut Protein Bites

GLO LEMON COCONUT PROTEIN HEART BITES šŸ‹ plantbased // raw // vegan // gluten-free // refined sugar-free // plant protein// superfood //


Gluten-Free Crust:


šŸ”ø1 cup tigernut flour fromĀ @organicgeminiĀ (or sub with 1 cup almond flour) šŸ”ø1 cup dates šŸ”ø1/2 cup dried figs šŸ”ø2 tbsp raw liquid sweetener of choice šŸ”ø1 tbsp raw coconut oil

šŸ”¹Blend in food processor until it turns into a big ball of dough. Do not over process. šŸ”¹Fill muffin tins half way with tigernut crust. Leave enough room for vegan coconut icing.


Vegan Coconut Lemon Icing:


šŸ”ø1 cup frozen coconut meat (de-thawed) from Trader Joe’s šŸ”ø1 cup soaked and rinsed cashews šŸ”ø1/2 cup raw coconut oil šŸ”ø1/2 cup raw liquid sweetener of choice šŸ”ø1 serving vanilla plantbased protein powder of choice šŸ”ø1/2 cup water šŸ”ø1/3 cup fresh lemon juice

šŸ”¹Blend till super creamy icing consistency. If still lumpy add a bit more water and blend again till smooth. šŸ”¹Pour over crusts. šŸ”¹Freeze. Ready when hard. Store in freezer.
