GLO LEMON COCONUT PROTEIN HEART BITES š plantbased // raw // vegan // gluten-free // refined sugar-free // plant protein// superfood //


Gluten-Free Crust:
šø1 cup tigernut flour fromĀ @organicgeminiĀ (or sub with 1 cup almond flour)
šø1 cup dates
šø1/2 cup dried figs
šø2 tbsp raw liquid sweetener of choice
šø1 tbsp raw coconut oil
š¹Blend in food processor until it turns into a big ball of dough. Do not over process. š¹Fill muffin tins half way with tigernut crust. Leave enough room for vegan coconut icing.
Vegan Coconut Lemon Icing:
šø1 cup frozen coconut meat (de-thawed) from Trader Joeās
šø1 cup soaked and rinsed cashews
šø1/2 cup raw coconut oil
šø1/2 cup raw liquid sweetener of choice
šø1 serving vanilla plantbased protein powder of choice
šø1/2 cup water
šø1/3 cup fresh lemon juice
š¹Blend till super creamy icing consistency. If still lumpy add a bit more water and blend again till smooth. š¹Pour over crusts. š¹Freeze. Ready when hard. Store in freezer.
