Thinly slice (julienne): -1/2 red cabbage -1 red & yellow pepper -2 carrots
Finely chop: -green onion
Raw, Vegan Creamy Cashew Sauce: (blend in a blender or food processor till smooth.)
¼ cup tahini ¼ cup cashew butter (could use almond butter too, or a blend of both) Juice from 2 limes ¼ cup tamari sauce (select a wheat free version for gluten-free diets) 1 tbsp maple syrup 1 tbsp dark sesame oil 1 clove garlic, minced 1″ piece of fresh ginger root, grated sea salt to taste
Mix zucchini, sweet potato noodles, cabbage, carrots, peppers in a bowl WITH the sauce. Don’t be afraid to use you hands to toss & mix it evenly! Top with green onions and as much cilantro as you can handle (amazing for detox!) Sprinkle with black sesame seeds and hemp seeds. Eat with chop sticks.
